Nigerian Food: Healthy Nigerian Breakfast; Baked Plantain and Eggs

Sometimes as Nigerians, we tell ourselves there’s not enough breakfast options but we disagree on this platform. The issue is we are stuck to particular ways of doing things and now we are bored.

Plantain and eggs is one delicious breakfast to have in Nigeria. Currently, plantain can be bought for as low as 200 a bunch and eggs 200 for 5 pieces. 

Many people love to fry their plantain and eggs which is absolutely delicious. The juicy taste of the plantain, accompanied with the perfectly fried eggs is bae.


While it admiring the standard way of having plantain and eggs in Nigeria, why don’t we switch things up, we can have our plantain baked!

Baked plantain is more like having boiled plantain which has less cholesterol and calories that is usually gotten from the oil. It keeps you healthier and still retains this awesome taste, so baked plantain and eggs are a healthy option for a Nigerian breakfast.
