I will consider this meal a loner in the Nigerian dishes. Ekuru has only one ingredient which is beans. If well prepared, it tastes amazing, accompanied by some spicy stew. YUM!
Ingredient;
- 2 cups of Beans.
- Tools
- Moin Moin moulder
Preparation:
Peel your beans; make sure you have all the beans peeled. Soak the peeled beans in water for about 20mins and blend the beans. After the beans is well blended, mix you beans batter with a wooden spatula, and mix in one direction thereby allowing air into the batter, do not mix in the other direction or you will be closing the batter which will make the Ekuru hard which is not what we want.
After you have
mixed your beans batter properly, take your Moin Moin moulder, scoop a considerable amount of batter into it, advisably 2 scoops of batter per mould and repeat to all the batter.
Arrange your mould into a pot which has 1 ¼ of it filled with hot water, place your pot on medium heat and cook for 40mins. You can serve with spicy stew and can also choose to serve with Okoro soup.
