Back in the days, this was the quick afternoon snack before we ate amala and ewedu. Sold at the junction most times by a middle-aged woman, the crunchy dundun could be sold with either ata din din (fried stew) or ewa agoyin. O boy! Dundu is the Yoruba Language for fried yam; today you’ll be making your own Dundu.
Ingredients:

One
tuber of yam
·
1
litre of vegetable oil
Process:
Peel your tuber
of yam,
Rinse it,
Cut into small desired
shape.
After you cut
your yam, soak in water and add 1 tablespoon of salt to the water. Now it’s
time to fry!
Empty all your
Vegetable oil into a frying pan set the pan on medium heat and wait till the oil
is hot. Once your oil is hot now with your clean hands take a few yams and put them
into the oil, remember we added water not from the water pour about a quarter cup
of the water into the oil. Let the yam fry for 20mins and then take the yam out
into a sieve.
Do this to all
your yams and your dundun is ready. You can serve with fried stew and a cup of hibiscus
cocktail (zobo).
