How to make Nigerian Pancakes

 

It might sound funny but it true many people still do not know how to make pancakes and it is not their fault. As Nigerian pancakes it not close to our indigenous food, it does not even meet the match of a spicy Akara or moin-mion for breakfast or even yam and eggs but what can we say pancakes are amazing when you taste them.

Today we learn how to make pancakes, making them taste more Nigerian ish, Nigerian ish  that sounds like a perfect name for a good comedic Nigerian series or book, but that’s by the way, let’s get it the making.

Ingredients:

190g of Flour

2 eggs

200ml of evaporated milk

2 tablespoons of margarine

2 tablespoons of sugar

3 tablespoons of diced peppers

1 tablespoon of onions

½ teaspoons of salt

1 to 2 tablespoons of vegetable oil

Preparation:

Take your eggs and break them into a clean wide bowl. Add 100ml of your milk to your eggs, add the dices onions, peppers, sugar, salt, melt your margarine and add it to the eggs ones cool, then whisk them all together properly, make sure they are all incorporated properly.

Gradually add the flour to the mixture in sections; once you feel the mixture begins to thicken add some of the milk that’s left, and till you feel it's light enough for you. Once they all mixed together. It’s time fry.

Place your fry pan on medium heat and once it is hot add a teaspoon of vegetable to the pan spread it all over the pan, add one scoop of your pancake batter to the pan, tilt the pan allowing the batter to spread all over the pan, let the side of the pancake fry for 2mins then flip it to the other side you will see it looks golden brown, now let the other side fry for the same time and then take them out.


Do the same to the amount of batter you have left, your pancakes are ready. You can enjoy them with a cup of juice and you have had breakfast.
