TIME TO COOK

Now that you have bought all these ingredients, I am sure you will be happy with your change of 50 Naira, I would be (wink) It is time to cook.

To start, wash your four eggs and place them in a small pot. fill half of the pot with water and boil the eggs on medium heat for 20mins. after 20mins drain the eggs from the water and replace the hot water with cold water, let it cool till you are through with cooking the spaghetti.

For the Jollof Spaghetti,  fill 3/4 of a medium-sized pot with water, place on medium heat, and let the water reach boiling point, once the water reach boiling point, take the pack of spaghetti and split it into 4 sections, take each section and break it into two (we are not Italians, but you can decide to add it into the hot water as a whole.) and add it to the boiling water, do the same to the remaining 3 sections, add half a teaspoon of salt to the spaghetti, and a tablespoon of vegetable oil. stir the spaghetti with a table fork and cover the pot.

Let the spaghetti cook for 3mins and take the pot off the heat, drain the spaghetti from the hot water, and set aside.

For the Jollof sauce, empty one and a half pepper and tomato mix sachets into a small bowl. add half a cup of water to the bowl and then stir till the mix is completely dissolved. chop a big ball of onions and set aside.

Place a medium-sized pot on medium heat, and add one and a half sachets of vegetable oil to the pot, once the oil is hot, add the chopped onions to the oil and fry for 5-10mins stirring continuously. Once the onions are well fried add the dissolved pepper-tomato mix to the oil, while the pepper mix is bubbling add three seasoning cubes, half a sachet of curry, 2 tablespoons of crayfish,  and half a sachet of thyme, and also half a teaspoon of salt to the mixture.

Stir the pepper mixture in the pot till it is well fried (by this time you can distinguish between the oil and the pepper in the pot) then take your drained spaghetti and add to to the fried mixture, stir the spaghetti in the pot till all the spaghetti is well covered with the sauce (make none of the spaghetti is left white).  Now add half a cup of water to the pot, reduce the heat to a low range and cover the pot. Let the spaghetti cook on low heat till all the water is dried, then give the spaghetti a light stir, Your Jollof  Spaghetti is ready, all you have to do now is, peel your eggs and serve for four people.

Enjoy this budget-friendly spaghetti with that pack of juice you bought at the market, now you are eating like a king.
